 Black Bean Chili in a Roasted Pumpkin 
       Recipe By : 
       Frederick Post 
       Amount Measure 
       Ingredient -- Preparation Method 
         6 
       tablespoons olive oil (divided use) 
       Garnish : Cheddar 
       cheese, toasted pumpkin seeds 
       Heat 2 tablespoons 
       of oil in large pot and brown pork 
       Add onion, garlic 
       and bell pepper to the pot; saute 
       Bring to a simmer, 
       stirring occasionally for 1 hour. 
       Top with shredded 
       Cheddar cheese, toasted pumpkin seeds To prepare pumpkin for serving: 
       Preheat oven to 
       350 F. Cut top of the pumpkin and 
       Replace the 
       pumpkin top and bake until the shell is tender, 
       Meanwhile, wash 
       pumpkin seeds to remove strings; drain. NOTES : Frederick Post
