                   Unitarian Chicken and Rice Casserole

   1                    Chicken -- cut into pieces
1 pk Dry onion soup mix
1 Soup can full of water
1 c Un-cooked White rice
1 cn Cream of mushroom soup
Or Golden Mushroom soup
Spray the bottom and sides of a large flat casserole dish (9x13) with Pam
and cover bottom with rice. Place cut-up chicken evenly over the rice.
Sprinkle the package of onion soup mix on top of chicken. Spread contents
of the can of cream of mushroom soup over onion soup mix. Pour can of
water over top. More rice may be added if desired. Another cup of rice
and a cup of water may be added without changing the flavor and will help
if a big crowd shows up. Cover the dish with foil and bake in a preheated
325 F. oven for 3 hours.
I like to substitute 1/4 cup of wild rice for 1/4 cup of the white rice
and I usually use chicken breasts. The wild rice gives a nice texture
and taste to this dish. I also like to add 4 to 8 oz of mushrooms
sometimes.
