* Exported from MasterCook * Zucchini-Mint Salad - WW Recipe By : Weight Watchers Quick Meals Serving Size : 4 Preparation Time :0:00 Categories : Weight Watchers Salads Volume 2-2, Feb.'99 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 teaspoons olive oil 4 cups thinly sliced zucchini 3 tablespoons minced fresh mint 1 garlic clove -- crushed 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1. In large nonstick skillet, heat 2 teaspoons of the oil; add 2 cups of the zucchini. Cook over medium-high heat, stirring frequently, 4-5 minutes, until zucchini is golden brown. With slotted spoon, transfer zucchini to medium bowl. 2. In same skillet, cook remaining 2 cups zucchini, stirring frequently, 4-5 minutes, until golden brown; transfer to bowl with cooked zucchini. Add mint, garlic, salt, pepper and remaining 2 teaspoons oil; toss to combine. Refrigerate, covered, until chilled.
