Henninger, Woman's Day, 2-1-97 Serving Size : 4 Preparation Time :0:00 Categories : Cheese Eggs Luncheon Main Dishes Pasta/Noodles Ramen Volume 2-5 May '99 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 packages chicken-flavor ramen noodles -- seasoning packet reserved 6 large eggs 1/2 cup shredded Cheddar cheese 1/4 cup sliced green onions 2 teaspoons butter salsa Cook noodles from ramen noodles, in boiling water, reserving seasoning pkts. Drain. Beat eggs and seasoning pkts from noodles in a Medium bowl. Stir in cheese, green onions and noodles. Heat broiler. Melt butter in a large nonstick frypan*. Add noodle mixture and cook over Medium-Low heat for 7 minutes, then broil for 1-2 minutes until top is set. Invert on serving plate, cut in wedges and serve with salsa. * If skillet handle is plastic or wood, double-wrap it in foil to prevent scorching.
