  Mexican Appetizer Cheesecake

  2 teaspoons chicken soup base
  1 1/2 cups hot water
  24 ounces cream cheese
  1 1/2 teaspoons chili powder
  1/2 teaspoon hot sauce
  2 eggs
  1 cup chicken meat -- cooked, diced
  4 ounces Ortega chilies -- [1 can]

Put the chicken base in the water - set aside. Mix the cream cheese,
chili powder and hot sauce in a bowl. Add eggs and mix well. Add the
chicken stock and beat until smooth. Stir in the cooked, diced
chicken meat and the chilies.

Bake in a 9-inch springform pan at 350F for 30 minutes. Cool
thoroughly. Top with salsa and grated cheese.

Serve with corn chips

  Mincemeat Pies by Art

  Amount Measure Ingredient -- Preparation Method

  1 pound turkey burger
  1/2 cup water
  2 3/4 pounds Granny Smith apples -- cored and chopped
  [about 5 nice apples]
  1/2 pound dark brown sugar
  1/2 cup white vinegar
  1/4 cup molasses
  3/4 pound dark raisins
  1/2 pound currants [or white raisins]
  1/2 cup apple juice
  3/4 teaspoon ground cloves
  3/4 teaspoon ground nutmeg
  3/4 teaspoon ground allspice
  3/4 teaspoon ground cinnamon -- divided
  1/2 cup whiskey or rum -- divided

Place turkey burger in a 5-quart pot; add water and simmer until burger
is done. Drain and break up any chunks of burger until it is very fine.

Place the remaining ingredients (only 1/4 cup whisky/rum) in the pot.
Stir and bring to a simmer. Cover and cook gently for 1 hour, stirring
occasionally, or until apples are well done. Remove from heat and
allow to cool. (Can be made several days ahead and refrigerated or
frozen.)

Prepare favorite double crust for 9-inch pie.

Place one-half of meat mixture into pie shell. Pour 1/4 cup whiskey/
rum over mixture. Place remaining crust on top and seal to bottom
crust. Put hole in center of top crust to allow steam to escape
while baking. Repeat with remaining mixture or freeze for later use.

Bake in preheated 375° F oven for 1 hour or until brown and bubbly.

NOTES : For two 9-inch pies. Pies should be served warm.

Chef notes: I made this for Thanksgiving and it turned out great.
However, I only did the filling; Doris made the crusts and did the
baking. The amount makes two nicely filled pies....the way I like them.

  Sugar Plums

  1 tin sweetened condensed milk
  2 packages Jello(R) -- small pkgs.
  1 1/2 cups coconut
  1 cup wafer crumbs

Mix together, roll into balls to shape plums, apples, strawberries.
Roll in Jello powder. Decorate with cherry stem.

Sounds like a really neat recipe for kids.

[Chef] That's it.
[] Very much honey? I never think of that as sweet.
[] I think the honey would counteract the hot ingredients - as in a lot of mustards.
[] OK, personal choice as to proportions?
[] Sounds like a "taste until you like it" proposition to me.
[Chef] I can't give measurements - cause I don't know - I just make it.
[] I think about 80 % of what most of us cook is that way.
[] I would like to dip chicken nuggets in that!
[] Or ribs.
[] Or slather it on a beef sandwich.
[Chef] It's a truly unique sauce. Awesome on a philly sandwich.
