   1      tablespoon    butter
1 cup chopped onion (use Vidalias)
5 eggs -- (5 to 6)
1/2 cup freshly grated Parmesan cheese
salt and freshly ground pepper to taste
parsley sprigs for garnish
Preheat the oven to 350 degrees. In a 9" or 10" skillet over medium heat, 
saute the onion in the butter until soft, but not browned. While they are
cooking, beat together the eggs, cheese, salt and pepper. When the onions
are ready, pour the egg mixture into the skillet around the onions. Cook
over medium heat for about 10 minutes, or until the eggs set up on the
bottom.
Transfer the skillet to the oven. Bake until the top of the frittata is no 
longer runny. You can speed things up by putting the pan under the broiler
on low, but keep you eye on it. Garnish and serve.
Makes 4 servings.

   1      small         Granny Smith apple -- with peel on, diced
into 1/4" pieces
1 tablespoon fresh lemon juice
1 loaf French bread 12-15" long
about 2-1/2" in diameter
1 tablespoon butter
1/2 tablespoon canola oil
1 small medium Vidalia onion (or sweet red onion)
-- very thinly sliced
4 teaspoons sugar
1 tablespoon apple brandy (Calvados) -- (1 to 2)
In a medium bowl, toss the apple pieces with the lemon juice and set aside.
Cut the loaf of bread into 1/4" thick rounds (discard the two ends), and
place them on a cookie sheet and set in the oven or under a broiler on low
just long enough to toast them. Turn them and toast again. They should be
slightly brown, but not too crumbly.
Heat the butter and the oil in a medium skillet over medium heat. Add the
onions and cook, stirring, until the onions soften. Add the sugar and
reduce the heat to medium-low. Let the onion cook, stirring occasionally,
until they darken a bit and become soft. Increase the heat and add the
apples. Cook for about a minute, stirring, then add the Calvados and cook
|until most of the liquid has evaporated from the pan. Serve warm on the
crostini toasts. Makes 3/4 cup of compote, 12-15 crostini.

   8                    skinless boneless chicken breast halves -- OR
6 (skinless thighs and 4 breast halves)
4 cups Rice Krispies
2 teaspoons cumin
1 1/2 teaspoons granulated garlic
2 tablespoons paprika
3/4 cup fresh parmesan cheese -- grated
salt and pepper
2 eggs
6 oz. andouille sausage -- chopped
1 cup fat free plain yoghurt
chopped parsley
1 teaspoon cumin
Saute andouille sausage and drain on paper towels to remove excess fat. 
Roughly crush Rice Krispies in plastic bag with rolling pin. Put Rice
Krispies in large flat bowl and add cumin, garlic, paprika, parmesan
cheese, salt and pepper to taste. Stir in parmesan cheese and cooled
andouille sausage.
In another flat dish, beat the eggs. Dip chicken in eggs, then in dry 
mixture, pressing to coat. Put chicken on baking sheet that has been
sprayed with Pam. Bake in 350 degree oven for 30 minutes. Garnish with
chopped fresh parsley and grape tomatoes.
Sauce: Add 1 teaspoon cumin and 1 tablespoon chopped parsley to 1 cup fat 
free yoghurt. Serve sauce on the side.
