   2      cups          flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoons cinnamon
3 eggs
1/2 cup oil
1 1/2 cups sugar
1 teaspoon vanilla
1/2 cup raisins
1/2 cup chopped nuts
2 cups diced mango (or apricots)
1/4 cup flaked coconut
Preheat oven to 350F. Grease a one-loaf pan.
Sift flour, soda, salt and cinnamon into a large mixing bowl.  Make a well 
and add the remaining ingredients, mixing thoroughly. Pour into prepared
pan and let stand for 20 minutes.
Bake for 1 hour.

   1      dozen         well seasoned boiled crabs
1 cup olive oil
1/3 cup apple cider vinegar
4 cloves garlic -- pressed
1 teaspoon Coleman’s Dry Mustard
1 teaspoon horseradish -- (to 1 Tbsp.)
1 Tablespoon worcestershire sauce
6 Tablespoons fresh lemon juice
1 stem celery -- finely diced
leaves and all
1 medium bell pepper -- finely diced
1 medium yellow onion -- finely diced
4 green onions -- sliced 1/4" thick,
white & green parts
1/4 cup parsley -- minced (1/4 to 1/2)
salt and pepper -- depending on how
the crabs are seasoned
Clean crabs, saving fat and roe, if you were lucky enough to get she crabs.
When you’ve finished cleaning the crabs make a stock of the shells you’re
going to discard to freeze for later use.
Break the crab bodies in half, remove large claws and crack gently with a 
nut or claw cracker, leaving intact as much as possible, just so marinade
can soak in. Place in tupper.
Mix other ingredients, adding reserved fat and roe, and pour all over the 
crabs. Cover and refrigerate, turning over every now and then. Allow to
marinate at least a day. Taste for salt.
This improves with age - up to 5 days, maybe a week.  Give guests gumbo 
bowls to hold the sauce. Serve with beer, french bread, and paper towels.
# of servings depends on how messy you're willing to get since you eat
it with your hands; no other utensil works as well.
This is an old New Orleans recipe.  Every little neighborhood restaurant
and bar had a version of this in the good ole days!

I love ice tea, but for some reason don't get into the flavored teas 
that much. I have found one blend I really like. I take a t pot put 3
bags of black tea and one bag of green tea (mostly for health reasons)
fill with water and put that in the microwave for 4 minutes.
Take it out and let it cool to room temp, remove the bags, add two heaping 
tablespoons of Lipton ice tea mix ** (the stuff in the jar with the
artificial sweetners) Pour this into a 1/2 gallon container. (I use old
gator aid bottles) and fill to the top with water, cool.
When you are ready, you pour one 16 oz glass of tea so that the glass 
is almost full, maybe an inch from the top. Then add some Strawberry
(actually any red flavor) Kool aid and fill the glass up to the top, then
fill the 1/2 gallon container up to the top with kool aid. Gives it a nice
fresh flavor, a wee bit of sugar, and no after taste. I drink this all the
time. At least 1/2 gallon a day.
I make the koolaid in 1/2 gallon batches and give that to the kids. I 
always have both ice tea and kool aid in the house. Down here you tend to
drink a lot!
**Here in Acapulco I can only buy the Lemon flavored but the Raspberry 
which is available in the US is better. Either works.
